Ingredients

  • 4 cups Cooked white rice, day-old and cold (freshly cooked rice will turn mushy; chill it uncovered in the fridge for at least 2 hours or overnight)
  • 1 lb Ground turkey
  • 2 medium Carrots, peeled and finely diced
  • 1 cup Frozen peas
  • 2 tbsp Vegetable oil, divided
  • ¼ tsp Garlic powder
  • ¾ tsp Salt (or to taste)
  • ⅛ tsp Black pepper (optional, for a tiny kick)

Instructions

  1. Peel and finely dice 2 medium carrots into small, even pieces about the size of a pea.
  2. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add 1 lb ground turkey to the hot skillet. Break it up with a wooden spoon or spatula and cook, stirring occasionally, until no pink remains and the turkey is lightly browned, about 5 to 6 minutes.
  4. Stir in the 2 medium carrots, finely diced and cook for 2 minutes, stirring often, until they start to soften.
  5. Add 1 cup frozen peas and cook for another minute, stirring, until the peas are warmed through and bright green.
  6. Push the turkey and vegetables to one side of the skillet. Pour 1 tbsp vegetable oil into the empty side and let it heat for a few seconds.
  7. Add 4 cups cooked white rice (day-old and cold) to the oiled side of the skillet. Break up any clumps with your spoon, then toss everything together, stirring and folding until the rice is heated through and well mixed with the turkey and veggies, about 3 to 4 minutes.
  8. Sprinkle ¾ tsp salt, ¼ tsp garlic powder, and ⅛ tsp black pepper (optional) over the fried rice. Stir well to distribute the seasonings evenly. Taste and add a pinch more salt if you like.
  9. Spoon the fried rice into bowls and serve warm with a spoon.
