Stuffed Portobello Mushrooms with Quinoa and Spinach

Ingredients

  • 4 large caps portobello mushrooms, stems removed, gills scraped out with a spoon
  • ¾ cup quinoa, rinsed
  • 1½ cups vegetable broth (or water)
  • 3 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 4 cups fresh spinach, roughly chopped
  • ⅓ cup sun-dried tomatoes, chopped (oil-packed or rehydrated dry-packed)
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • ¾ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper, freshly ground
  • 1 tablespoon lemon juice, freshly squeezed

Instructions

  1. Rinse ¾ cup quinoa under cold water in a fine-mesh strainer. Drain well.
  2. In a medium saucepan, combine the rinsed ¾ cup quinoa and 1½ cups vegetable broth. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until the quinoa is tender and the liquid is absorbed.
  4. While the quinoa simmers, preheat your oven to 400°F (200°C).
  5. Line a large baking sheet with parchment paper or a silicone mat.
  6. Remove the stems from 4 large portobello mushroom caps by twisting them off. Use a spoon to gently scrape out the dark gills from the underside of each cap.
  7. Brush both sides of the mushroom caps with 2 tablespoons olive oil, making sure they're well coated. Season lightly with a pinch of salt and black pepper.
  8. Place the mushroom caps gill-side up on the prepared baking sheet. Roast in the preheated oven for 10 minutes to release moisture and soften.
  9. While the mushrooms roast, mince 3 cloves garlic.
  10. Roughly chop 4 cups fresh spinach.
  11. Chop ⅓ cup sun-dried tomatoes into small pieces.
  12. Chop ¼ cup fresh parsley.
  13. After the quinoa has simmered for 15 minutes, remove it from the heat and let it sit, covered, for 5 minutes. Then fluff with a fork.
  14. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the minced 3 cloves garlic and cook, stirring, until fragrant, about 30 seconds.
  15. Add the chopped 4 cups fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2 minutes.
  16. Add the cooked ¾ cup quinoa, chopped ⅓ cup sun-dried tomatoes, chopped ¼ cup fresh parsley, 1 teaspoon dried oregano, ¾ teaspoon salt, ¼ teaspoon black pepper, and 1 tablespoon lemon juice to the skillet. Stir everything together until well combined and heated through, about 1 minute. Taste and adjust seasoning if needed.
  17. Remove the roasted mushroom caps from the oven. If they've released a lot of liquid, carefully tilt the baking sheet over the sink to drain it off.
  18. Spoon the quinoa-spinach filling generously into each mushroom cap, mounding it slightly.
  19. Return the stuffed mushrooms to the oven and bake for 10 minutes, until the filling is hot and the mushrooms are fully tender.
  20. Remove from the oven and serve immediately, garnished with extra fresh parsley if you like.
