Ingredients

  • 1 medium zucchini, ends trimmed, chopped into 1-inch chunks
  • 4 oz ground chicken ((breast meat preferred for leanness))
  • for steaming water

Instructions

  1. Trim the ends from 1 medium zucchini (8 oz / 225 g) and chop into 1-inch chunks.
  2. Fill a medium pot with about 1 inch of water and bring to a boil over high heat. Place a steamer basket or insert in the pot.
  3. Add the zucchini chunks to the steamer basket, cover, and steam for 8 minutes, until very tender and easily pierced with a fork.
  4. While the zucchini steams, heat a small skillet over medium heat. Add 4 oz (115 g) ground chicken and break it apart with a wooden spoon or spatula.
  5. Cook the chicken, stirring and breaking it into small crumbles, for 8 to 10 minutes, until no pink remains and the meat is fully cooked through. The internal temperature should reach 165°F (74°C).
  6. Remove the steamed zucchini from the pot and transfer to a bowl. Remove the cooked chicken from the skillet and add it to the bowl with the zucchini.
  7. Use a fork or potato masher to mash the zucchini and chicken together until you reach your desired consistency. Some texture is fine, or mash until very smooth.
  8. Let the mash cool to a safe serving temperature before offering to your child.
