Ingredients
- 1 medium zucchini, ends trimmed, chopped into 1-inch chunks
- 4 oz ground chicken ((breast meat preferred for leanness))
- for steaming water
Instructions
- Trim the ends from 1 medium zucchini (8 oz / 225 g) and chop into 1-inch chunks.
- Fill a medium pot with about 1 inch of water and bring to a boil over high heat. Place a steamer basket or insert in the pot.
- Add the zucchini chunks to the steamer basket, cover, and steam for 8 minutes, until very tender and easily pierced with a fork.
- While the zucchini steams, heat a small skillet over medium heat. Add 4 oz (115 g) ground chicken and break it apart with a wooden spoon or spatula.
- Cook the chicken, stirring and breaking it into small crumbles, for 8 to 10 minutes, until no pink remains and the meat is fully cooked through. The internal temperature should reach 165°F (74°C).
- Remove the steamed zucchini from the pot and transfer to a bowl. Remove the cooked chicken from the skillet and add it to the bowl with the zucchini.
- Use a fork or potato masher to mash the zucchini and chicken together until you reach your desired consistency. Some texture is fine, or mash until very smooth.
- Let the mash cool to a safe serving temperature before offering to your child.
