Southern-Style Possum Stew

Ingredients

  • 1 whole (about 3-4 lbs), cleaned and quartered possum, quartered (or substitute rabbit if possum is unavailable)
  • 4 slices bacon, chopped
  • 1 large yellow onion, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 3 medium russet potatoes, peeled and cut into 1-inch chunks
  • 3 large carrots, peeled and cut into 1-inch pieces
  • 1 can (28 oz) diced tomatoes (with juices)
  • 4 cups chicken or beef stock
  • 2 bay leaves
  • 4 sprigs fresh thyme (or 1 tsp dried)
  • 1 tsp smoked paprika
  • ½ tsp black pepper, freshly ground
  • to taste kosher salt
  • 2 tbsp Worcestershire sauce
  • 2 tbsp all-purpose flour (optional, for thickening)

Instructions

  1. In a large Dutch oven or heavy-bottomed pot over medium heat, cook 4 slices chopped bacon until crispy, about 6-8 minutes. Remove bacon with a slotted spoon and set aside, leaving the fat in the pot.
  2. Season 1 whole quartered possum (3-4 lbs) generously with kosher salt and ½ tsp freshly ground black pepper. Working in batches if needed, brown the possum pieces in the bacon fat over medium-high heat, about 4-5 minutes per side until deeply golden. Remove and set aside.
  3. Dice 1 large yellow onion and 2 stalks celery.
  4. Reduce heat to medium and add the diced onion and celery to the pot. Sauté, stirring occasionally, until softened and beginning to caramelize, about 8 minutes.
  5. Mince 4 cloves garlic.
  6. Add the minced garlic, 1 tsp smoked paprika, and 2 tbsp flour (optional) to the pot. Stir constantly for 1-2 minutes until fragrant and the flour is lightly toasted.
  7. Pour in 1 can (28 oz) diced tomatoes with juices, 4 cups chicken or beef stock, and 2 tbsp Worcestershire sauce. Stir well, scraping up any browned bits from the bottom of the pot.
  8. Return the browned possum pieces and cooked bacon to the pot. Add 2 bay leaves and 4 sprigs fresh thyme. Bring to a boil, then reduce heat to low, cover, and simmer gently for 1 hour and 30 minutes, stirring occasionally.
  9. While the stew simmers, peel and cut 3 medium russet potatoes into 1-inch chunks. Peel and cut 3 large carrots into 1-inch pieces.
  10. After the initial simmer, add the potato and carrot chunks to the pot. Stir gently, cover, and continue simmering for another 45 minutes until the vegetables are tender and the meat is falling off the bone.
  11. Carefully remove the possum pieces. Once cool enough to handle, pull the meat from the bones and shred it roughly. Discard bones, bay leaves, and thyme stems. Return the shredded meat to the pot.
  12. Taste and adjust seasoning with kosher salt and more black pepper if needed. Let the stew rest off heat for 5-10 minutes to let flavors meld.
  13. Ladle into bowls and serve hot with crusty bread or cornbread on the side.
