Southern-Style Possum Stew

Ingredients

  • 1 whole (3-4 lbs) possum, cleaned, dressed, and cut into serving pieces (legs, thighs, and loin portions work best)
  • ½ cup all-purpose flour (for dredging)
  • 4 slices bacon, chopped
  • 1 large yellow onion, diced
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 3 medium carrots, peeled and cut into 1-inch chunks
  • 4 medium Yukon gold potatoes, peeled and quartered
  • 6 cups chicken stock
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 1 tsp smoked paprika
  • 1 tsp black pepper, freshly ground
  • 2 tsp kosher salt (or to taste)
  • 2 tbsp Worcestershire sauce
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Pat the possum pieces dry with paper towels and season all over with 1 tsp kosher salt and ½ tsp black pepper.
  2. Place ½ cup all-purpose flour in a shallow dish and dredge each possum piece until well coated, shaking off excess.
  3. In a large Dutch oven or heavy pot over medium heat, cook 4 slices chopped bacon until crispy, about 6-8 minutes.
  4. Remove bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
  5. Working in batches if needed, brown the dredged possum pieces in the bacon fat over medium-high heat, about 3-4 minutes per side until golden. Transfer to a plate.
  6. Reduce heat to medium and add 1 large diced onion and 3 stalks chopped celery to the pot. Sauté until softened, about 5 minutes, scraping up any browned bits from the bottom.
  7. Add 4 cloves minced garlic, 1 tsp smoked paprika, and ½ tsp black pepper. Cook, stirring constantly, until fragrant, about 1 minute.
  8. Return the browned possum pieces and cooked bacon to the pot along with 6 cups chicken stock, 2 bay leaves, 4 sprigs fresh thyme, and 2 tbsp Worcestershire sauce. Stir to combine.
  9. Bring to a boil, then reduce heat to low, cover, and simmer gently for 1 hour and 30 minutes, until the meat is tender.
  10. While the stew simmers, peel and quarter 4 medium Yukon gold potatoes, and peel and cut 3 medium carrots into 1-inch chunks.
  11. After the initial simmer, add the prepared potatoes and carrots to the pot. Stir, cover, and continue simmering for another 30-40 minutes until vegetables are fork-tender.
  12. Remove bay leaves and thyme sprigs. Taste and adjust seasoning with the remaining 1 tsp kosher salt and additional pepper if needed.
  13. Chop ¼ cup fresh parsley and sprinkle over the stew before serving.
