Ingredients
- ½ cup millet, rinsed
- 2 cups water (for cooking millet)
- 4 oz boneless, skinless chicken breast
- 1 cup water (for poaching chicken)
- a tiny pinch salt (optional, if your child tolerates it)
- a very small pinch ground cinnamon (optional, only if your child's allergist has cleared it)
Instructions
- Rinse ½ cup millet in a fine-mesh sieve under cool running water until the water runs clear.
- Put the rinsed millet into a medium saucepan and add 2 cups water. Bring to a boil over medium-high heat.
- Once boiling, lower the heat to low, cover the pan, and simmer for 20 minutes. The millet will absorb the water and become tender and creamy.
- While the millet simmers, place 4 oz boneless, skinless chicken breast in a small saucepan and add 1 cup water. Bring to a gentle simmer over medium heat.
- Poach the chicken at a gentle simmer (small bubbles, not a rolling boil) for 10 minutes, or until the chicken is cooked through and no longer pink in the center.
- Remove the chicken from the water and let it cool on a plate for a few minutes, then use a fork to shred it into very fine, small pieces.
- When the millet has finished cooking, remove it from the heat and let it sit covered for 5 minutes to steam and soften further.
- Fluff the millet with a fork, then fold in the shredded chicken and, if using, a tiny pinch salt and a very small pinch ground cinnamon. Stir gently to combine. If the mixture is too thick, add a tablespoon or two of warm water to reach the texture your child prefers.
- Serve warm in a bowl. Let it cool to a safe temperature before offering it to your child.
