  • 1 lb Parsnips, peeled and cut into 1-inch chunks

Instructions

  1. Fill a medium saucepan with enough water to cover the chicken by about 1 inch and bring to a gentle simmer over medium heat.
  2. Add 8 oz (225 g) boneless, skinless chicken breast to the simmering water. Reduce heat to low, cover, and poach gently for 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The water should barely bubble.
  3. While the chicken poaches, peel 1 lb (450 g) parsnips and cut them into 1-inch chunks.
  4. Fill a large pot with water, bring to a boil over high heat, then add the 1 lb (450 g) parsnip chunks. Boil for 12 to 15 minutes, until the parsnips are completely tender when pierced with a fork.
  5. Remove the chicken from the poaching liquid with a slotted spoon and transfer to a cutting board. Let it rest for 3 minutes.
  6. Drain the parsnips in a colander and return them to the pot. Mash thoroughly with a potato masher or fork until smooth and creamy. If the mash is too thick, add a spoonful of the cooking water and stir until you reach a soft, spreadable consistency.
  7. Shred the 8 oz (225 g) cooked chicken breast finely using two forks or your fingers, pulling it into very fine, soft pieces.
