Ingredients

  • 1 cup cubed butternut squash, peeled, seeded, and cut into ½-inch cubes
  • 4 oz ground lamb
  • 1 tsp olive oil (or other safe oil your child's allergist has cleared)
  • for steaming water

Instructions

  1. Peel 1 butternut squash, cut in half lengthwise, scoop out the seeds, and cut the flesh into ½-inch cubes to measure 1 cup (150 g).
  2. Fill a medium pot with about 1 inch of water and bring to a boil over high heat. Place a steamer basket or colander inside, making sure the water does not touch the bottom of the basket.
  3. Add the 1 cup (150 g) butternut squash cubes to the steamer basket, cover the pot with a lid, and steam for 12 to 15 minutes, until the squash is very soft and a fork slides through easily.
  4. While the squash steams, heat a small skillet over medium heat. Add 4 oz (115 g) ground lamb and break it up gently with a spoon. Cook for 6 to 8 minutes, stirring occasionally, until the lamb is cooked through with no pink remaining and any liquid has evaporated. The meat should be tender and lightly browned in spots.
  5. When the squash is done, carefully remove the steamer basket and transfer the squash to a small bowl. Mash thoroughly with a fork or potato masher until completely smooth, with no lumps.
  6. Add the cooked ground lamb (4 oz / 115 g) to the mashed squash and fold together gently until combined. The mixture should be soft and cohesive.
  7. Drizzle 1 tsp (5 ml) olive oil over the top and stir once more to distribute. Serve warm.
