Smoky Harissa Pork Chops with Roasted Cauliflower and Pomegranate
This dish hits that sweet spot between North African warmth and fresh, bright flavors. The pork chops get a generous coat of harissa paste spiked with smoked paprika, a little honey, and lemon, then go straight onto the cast iron for a serious sear. The cauliflower roasts until the edges are deeply caramelized and almost nutty, and the whole thing gets scattered with jewel-bright pomegranate seeds and fresh herbs at the end. It photographs beautifully, the flavors are bold without being heavy, and there's nothing in here to worry about allergy-wise. Spicy, smoky, a little sweet, a little tangy. Great weeknight dinner that feels like more of an occasion than it is.
Ingredients
- 5 (about 8 oz each) Bone-in pork chops, patted dry
- 5 tbsp Harissa paste
- 2 tsp Smoked paprika
- 1 tsp Ground cumin
- 1 tbsp Honey
- 1 large Lemon, zested and juiced
- 4 tbsp Olive oil
- 2 tsp Fine sea salt
- 1 large head Large cauliflower, cut into medium florets
- 4 cloves Garlic cloves, minced
- 1 tsp Ground coriander
- 1/4 tsp Cayenne pepper
- 1/2 cup Pomegranate seeds
- 1/2 cup loosely packed Fresh flat-leaf parsley, roughly chopped
- 1 tbsp Margarine
- 1/4 cup Chicken stock
Instructions
- Pull 5 bone-in pork chops (about 8 oz / 225 g each) out of the fridge and set them on the counter. They need 20 to 25 minutes at room temperature before they hit the pan, so do this first. Pat them completely dry with paper towels while you're at it. Dry surface = better sear.
- In a small bowl, mix 5 tbsp harissa paste, 2 tsp smoked paprika, 1 tsp ground cumin, 1 tbsp honey, and the zest and juice of 1 large lemon (about 3 tbsp juice, 1 tsp zest). Stir it together into a thick, glossy paste. Taste it. It should be smoky, a little fiery, and bright. Set aside half of this marinade (roughly 3 tbsp) in a separate small bowl for serving.
- Rub 1 tsp fine sea salt evenly over both sides of all 5 chops. Then spread the remaining harissa paste all over them, coating both sides generously. Set them aside to marinate while you prep the cauliflower.
- Preheat your oven to 425°F (220°C) now. That gives it time to come to full temperature while you prep the cauliflower.
- Cut 1 large head of cauliflower into medium florets, roughly the same size so they cook evenly. Aim for pieces about 1.5 inches across. Drop them all into a large mixing bowl.
- Mince 4 cloves garlic finely and add to the cauliflower bowl along with 2 tbsp olive oil, 1 tsp ground coriander, 1/4 tsp cayenne, and 1 tsp fine sea salt. Toss everything together so every floret is coated. Spread onto a large parchment-lined baking sheet in a single layer. Don't crowd them or they'll steam instead of caramelize. Use two sheets if needed.
- Roast the cauliflower at 425°F (220°C) for 25 to 30 minutes, until the cut edges are a deep amber and the tips are starting to char. You're looking for serious color here, not just pale beige. Rotate the pan halfway through.
- While the cauliflower roasts, roughly chop 1/2 cup loosely packed fresh flat-leaf parsley and set aside. If using a whole pomegranate, halve it and work out 1/2 cup pomegranate seeds (about 85 g) now. A good trick: hold each half cut-side down over a bowl and whack the back firmly with a wooden spoon.
- When the cauliflower has about 10 minutes left, heat your cast-iron pan over medium-high heat for 2 to 3 minutes until genuinely hot. A drop of water should skitter and vanish immediately. Add 2 tbsp olive oil and swirl to coat.
- Lay the marinated pork chops in the hot pan. Don't move them. Sear for 3 to 4 minutes on the first side until the bottom is deeply browned and releases cleanly from the pan. Flip and sear the other side for another 2 to 3 minutes. If your pan isn't big enough for all 5, cook in two batches and keep the first batch loosely covered with foil.
- Check the internal temperature with a meat thermometer. You want 140°F (60°C) at the thickest part, away from the bone. Once there, pull the chops onto a plate and let them rest for 5 minutes. The carry-over heat will bring them to a safe 145°F (63°C) and the juices will redistribute.
- While the chops rest, quickly make a simple pan sauce. Keep the cast iron on medium heat. Add 1 tbsp margarine and let it melt, then pour in 1/4 cup (60 ml) chicken stock. Scrape up any browned bits with a spatula. Stir in the reserved harissa paste from earlier. Let it bubble for about 1 minute until slightly reduced, then take it off the heat.
- To plate, arrange the roasted cauliflower on a large platter or across individual plates. Lay the pork chops over or alongside. Spoon the pan sauce over everything. Scatter 1/2 cup pomegranate seeds and the chopped flat-leaf parsley generously across the top. Serve with extra lemon wedges on the side if you like.
