Saffron Chicken Paella with Charred Tomatoes & Crispy Garlic

Ingredients
- 1.5 lb Boneless skinless chicken breasts, cut into 2-inch chunks (or chicken tenderloins work great too)
- 2 cups Bomba or Calasparra rice (Arborio works as a backup — do NOT rinse the rice)
- 4 cups Chicken stock (low-sodium preferred)
- 1/2 tsp Saffron threads, bloomed in warm water (don't skip this — it's the soul of the dish)
- 3 tbsp Warm water (for blooming the saffron)
- 1.5 cups Cherry tomatoes, halved
- 10 cloves Garlic cloves, 6 thinly sliced for crispy chips, 4 minced for the sofrito
- 1 large Yellow onion, finely diced
- 1 large Red bell pepper, deseeded and diced
- 2 tsp Smoked paprika (pimentón de la Vera if you can find it)
- 1 tsp Sweet paprika
- 1/4 tsp Cayenne pepper (bump to 1/2 tsp if you love heat)
- 1/2 tsp Turmeric (gives extra golden colour)
- 2 tbsp Tomato paste
- 1 (14 oz) can Diced canned tomatoes
- 4 tbsp Olive oil (divided — 2 tbsp for cooking, 2 tbsp for the crispy garlic)
- 1 tbsp Margarine (for finishing richness)
- 1 large Lemon, half juiced, half cut into wedges for serving
- 1/2 cup loosely packed Fresh flat-leaf parsley, roughly chopped
- 1 tbsp Coconut aminos (adds a subtle umami depth without soy)
- to taste Salt (about 1.5 tsp total throughout cooking)
- 4 sprigs Fresh thyme (or 1/2 tsp dried thyme)
Instructions
- Bloom your saffron first so it has time to work its magic. Crumble 1/2 tsp saffron threads into a small bowl and pour over 3 tbsp warm water (from the tap or 10 seconds in the microwave — it should be warm, not boiling). Set aside and let it steep while you prep everything else. The water should turn a gorgeous deep golden-orange within a few minutes.
- Cut 1.5 lb boneless skinless chicken breasts into 2-inch chunks. Season generously with salt and a pinch of the smoked paprika (just a pinch from your 2 tsp — save the rest). Set aside on a plate.
- In a small saucepan or in the microwave, warm 4 cups chicken stock until steaming hot. Stir in the bloomed saffron water (pour the whole bowl in). Keep warm on the lowest heat setting — adding hot stock to hot rice is key for even cooking.
- Now make your crispy garlic chips. In your cast iron pan over medium-low heat, warm 2 tbsp olive oil. Add 6 thinly sliced garlic cloves in a single layer. Cook slowly, stirring occasionally, until golden and crispy — about 4 to 5 minutes. Watch them carefully; they go from perfect to burnt fast. Scoop out with a slotted spoon onto a paper towel and sprinkle lightly with salt. Leave the garlic-infused oil in the pan.
- While the garlic chips cool, dice 1 large yellow onion and deseed and dice 1 large red bell pepper. Mince 4 garlic cloves. Halve 1.5 cups cherry tomatoes. Set everything aside in separate piles — your sofrito lineup is ready.
- Crank the heat under your cast iron pan to medium-high. Add 1 tbsp olive oil to the existing garlic oil. When shimmering, add the seasoned chicken chunks in a single layer — don't crowd them. Sear for 3 minutes per side until deeply golden. They don't need to be cooked through yet. Transfer to a plate.
- Reduce heat to medium. Add the diced onion and red bell pepper to the same pan. Cook, stirring occasionally, for 6–7 minutes until softened and starting to caramelise at the edges. Season with a pinch of salt.
- Add the 4 minced garlic cloves and stir for 1 minute until fragrant. Then add 2 tbsp tomato paste and stir it into the vegetables, cooking for another 2 minutes until it darkens slightly and smells toasty.
- Add 2 tsp smoked paprika, 1 tsp sweet paprika, 1/4 tsp cayenne, 1/2 tsp turmeric, and 4 fresh thyme sprigs. Stir everything together for 30 seconds — you're toasting the spices directly in the pan, which is where all that gorgeous depth comes from.
- Pour in the 1 (14 oz) can of diced tomatoes and 1 tbsp coconut aminos. Stir well and let it bubble for 3 minutes, scraping up any sticky bits from the bottom of the pan — that's flavour gold.
- Add 2 cups Bomba rice to the pan. Stir it through the sofrito so every grain is coated in the deep red, fragrant sauce. Spread it into an even layer across the pan.
- Pour the hot saffron-infused chicken stock evenly over the rice. Nestle the seared chicken pieces back into the rice, pressing them in slightly. Squeeze half a lemon over the top. Give the pan one single gentle shake to level everything out — from this point on, do NOT stir. Paella's magic comes from leaving it alone.
- Bring to a vigorous simmer over medium-high heat, then reduce to medium-low. Cook uncovered and undisturbed for 18–20 minutes. The liquid will slowly absorb and you'll see the rice appear dry on top. Place the halved cherry tomatoes cut-side up across the surface in the last 5 minutes of this cooking time — they'll char gently from the steam and heat.
- Now for the legendary socarrat (crispy bottom crust). Crank the heat to medium-high for exactly 2–3 minutes. You should hear a gentle crackling/sizzling sound — that's the crust forming. If you don't hear it, increase heat slightly. You're listening for the crackle, not smelling for burning. Remove from heat immediately.
- Add 1 tbsp margarine by dotting it across the top of the rice and let it melt from residual heat. Discard the thyme sprigs. Scatter the crispy garlic chips generously over the top, then shower with the fresh flat-leaf parsley. Arrange the remaining lemon wedges around the edge. Serve straight from the cast iron pan — it's the most beautiful serving vessel there is.
