Ingredients

  • 8 lamb rib chops (about 2 lb total) lamb rib chops, trimmed of excess fat (sometimes called lamb lollipops)
  • 1 large head cauliflower
  • ¼ cup pomegranate molasses
  • 4 cloves garlic
  • 6 sprigs fresh thyme
  • 5 tbsp olive oil, divided
  • 1½ tsp ground cumin
  • 1 tsp smoked paprika
  • to taste kosher salt
  • to taste black pepper, freshly ground
  • 1 tbsp honey (optional, for extra sweetness in the glaze)
  • ¼ cup pomegranate arils (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut 1 large head cauliflower into bite-sized florets, discarding the tough core.
  3. Toss the cauliflower florets on a large rimmed baking sheet lined with parchment with 3 tbsp olive oil (45 ml), 1½ tsp ground cumin, 1 tsp smoked paprika, and a generous pinch of kosher salt and black pepper. Spread them in a single layer.
  4. Roast the cauliflower for 25 minutes, flipping halfway through, until the edges are deeply golden and some florets are crispy and charred. While the cauliflower roasts, prepare the lamb and glaze.
  5. Mince 4 cloves garlic.
  6. Strip the leaves from 6 sprigs fresh thyme (you should have about 1 tablespoon of leaves).
  7. In a small saucepan over medium heat, combine ¼ cup pomegranate molasses (60 ml), the 4 cloves garlic, minced, the fresh thyme leaves (about 1 tbsp), and 1 tbsp honey (15 ml, if using). Simmer gently, stirring occasionally, for 5 minutes until the glaze thickens slightly and smells fragrant. Remove from heat.
  8. Pat 8 lamb rib chops (about 2 lb / 900 g total), trimmed of excess fat completely dry with paper towels. Season both sides generously with kosher salt and black pepper.
  9. Heat a large oven-safe skillet or cast-iron pan over high heat. Add 2 tbsp olive oil (30 ml) and let it shimmer.
  10. Sear the 8 lamb chops in the hot skillet for 2 minutes per side, working in batches if needed to avoid crowding, until deeply browned and crusted.
  11. Brush the tops of the seared lamb chops generously with half of the pomegranate glaze.
  12. Transfer the skillet to the oven and roast the lamb chops for 4 to 6 minutes, depending on thickness, until an instant-read thermometer inserted into the thickest part reads 130°F (54°C) for medium-rare or 140°F (60°C) for medium. Remove from the oven.
  13. Let the lamb chops rest in the skillet for 3 minutes, then brush with the remaining pomegranate glaze.
  14. Arrange the roasted cauliflower on a serving platter, place the glazed lamb chops on top or alongside, and scatter ¼ cup pomegranate arils (60 ml, if using) over everything for a pop of color and fresh tartness.
