Ingredients

  • 1 whole (about 2 lb) Store-bought rotisserie chicken, check label carefully for allergens, skin removed if desired (read the ingredient label to confirm it contains only chicken, salt, and any safe spices for your household)
  • 2 lb Russet potatoes, peeled and cut into 1-inch chunks
  • 4 tbsp Unsalted butter or neutral oil (use butter if safe, otherwise canola or avocado oil)
  • ½ cup Whole milk or safe milk substitute, warmed (use dairy milk if safe, otherwise oat, rice, or soy milk)
  • to taste Fine sea salt
  • 1 lb Fresh green beans, ends trimmed

Instructions

  1. Fill a large pot with cold water and add 2 lb russet potatoes, peeled and cut into 1-inch chunks. Add a generous pinch of fine sea salt. Bring to a boil over high heat, then reduce to medium and simmer until the potatoes are completely tender when pierced with a fork, about 15 minutes.
  2. While the potatoes are simmering, fill a medium saucepan with about 1 inch of water and bring to a boil. Place 1 lb fresh green beans, ends trimmed, in a steamer basket or insert. Set the basket over the boiling water, cover tightly, and steam until the beans are tender but still have a little snap, about 6 to 8 minutes.
  3. While the beans are steaming, pull the meat from 1 whole (about 2 lb / 900 g) store-bought rotisserie chicken. Discard the skin if you prefer, or leave it on. Tear or slice the meat into plain, bite-sized pieces and set aside on a clean plate. Keep warm by covering loosely with foil if needed.
  4. Warm ½ cup (120 ml) whole milk or safe milk substitute in the microwave or in a small saucepan until just steaming, about 1 minute.
  5. When the potatoes are tender, drain them in a colander and return them to the hot pot. Add 4 tbsp (60 g or 60 ml) unsalted butter or neutral oil and the warmed milk. Mash with a potato masher or fork until smooth and fluffy. Taste and season generously with fine sea salt until it tastes right to you.
  6. Remove the steamed green beans from the heat. Season lightly with fine sea salt to taste.
  7. Divide the mashed potatoes, pulled chicken, and green beans among four plates. Serve immediately.
