Ingredients

  • 1 lb white potatoes, peeled and cut into 1-inch chunks
  • 8 oz ground turkey (93% lean or leaner)
  • 2 tbsp water (or as needed to bind)

Instructions

  1. Peel and cut 1 lb white potatoes into 1-inch chunks.
  2. Place the potato chunks in a large pot and cover with cold water by about 1 inch. Bring to a boil over high heat, then reduce to medium and simmer until the potatoes are very tender when pierced with a fork, about 15 minutes.
  3. While the potatoes are simmering, cook 8 oz ground turkey (93% lean or leaner) in a skillet over medium heat, breaking it up with a spoon into very small crumbles, until no pink remains and the turkey is fully cooked through, about 8 minutes. Transfer to a plate and let cool slightly.
  4. Preheat your oven to 375°F (190°C).
  5. Drain the potatoes in a colander and return them to the pot. Mash them with a potato masher or fork until completely smooth with no lumps.
  6. Transfer the mashed potatoes to a large mixing bowl. Add the cooked, crumbled turkey and 2 tbsp water (or as needed to bind). Mix gently with your hands or a spoon until everything is evenly combined. The mixture should hold together when squeezed but still feel soft.
  7. Scoop about 2 tablespoons of the mixture at a time and gently form into small patties, about 2 inches across and ½ inch thick. Place them on a baking sheet lined with parchment paper, spacing them about 1 inch apart. You should get about 12 small patties.
  8. Bake the patties for 18 to 20 minutes, until they are just firm to the touch and very lightly golden on the bottom. They will not brown much, and that's exactly right.
  9. Let the patties cool for 5 minutes on the baking sheet before serving. They will firm up a bit more as they cool.
