Ingredients

  • 1 medium (about 8 oz) Sweet potato, peeled and cubed
  • 4 oz Ground turkey (preferably 93% lean)
  • as needed for cooking Water

Instructions

  1. Peel and cube 1 medium sweet potato (about 8 oz / 225 g) into roughly 1-inch pieces.
  2. Place the sweet potato cubes in a medium pot and cover with water by about an inch. Bring to a boil over high heat, then reduce to medium and simmer until the sweet potato is very tender and easily pierced with a fork, about 12 to 15 minutes.
  3. While the sweet potato simmers, heat a large skillet over medium heat. Add 4 oz (115 g) ground turkey and break it up with a wooden spoon or spatula. Cook, stirring and breaking the turkey into very fine crumbles, until fully cooked through with no pink remaining and the pieces are tiny, about 6 to 8 minutes. The finer you break it up, the easier it is for little ones to manage.
  4. Drain the sweet potato well and return it to the pot or transfer to a mixing bowl. Mash until completely smooth using a potato masher or fork. If it's too thick, add a tablespoon or two of the cooking water to reach a creamy consistency.
  5. Add the cooked ground turkey to the mashed sweet potato and stir gently to combine. The turkey should be evenly distributed throughout the sweet potato.
  6. Let cool to a safe temperature before serving. Test a small spoonful on your wrist to make sure it's not too hot.
