German-Style Pork Chops with Roasted Cauliflower and Pomegranate

This is a German-leaning spin on a bold, weeknight-friendly pork chop dinner. The chops get a proper German-style marinade: whole-grain mustard, caraway, garlic, smoked paprika, and a good splash of dark beer. That combination gives you something sharp and earthy, with a deep savory crust from the cast iron. The cauliflower still roasts hot and gets properly caramelized, seasoned now with caraway and coriander so it fits the mood. The pomegranate seeds and parsley at the end still do their job, cutting through the richness with brightness and a little sweetness. It's a satisfying plate that feels grounded and hearty without being heavy.

Ingredients

  • 5 (about 8 oz each) Bone-in pork chops, patted dry
  • 4 tbsp Whole-grain mustard
  • 1 tbsp Dijon mustard
  • 3 tbsp Dark beer
  • 2 tsp Smoked paprika
  • 1 tsp Caraway seeds, lightly crushed
  • 1/2 tsp Ground cumin
  • 1 tbsp Honey
  • 1 large Lemon, zested and juiced
  • 6 cloves Garlic cloves, minced
  • 4 tbsp Olive oil
  • 2 tsp Fine sea salt
  • 1 large head Large cauliflower, cut into medium florets
  • 1 tsp Ground coriander
  • 1/2 tsp Caraway seeds, lightly crushed
  • 1/4 tsp Cayenne pepper
  • 1/2 cup Pomegranate seeds
  • 1/2 cup loosely packed Fresh flat-leaf parsley, roughly chopped
  • 1 tbsp Margarine
  • 1/4 cup Chicken stock

Instructions

  1. Pull 5 bone-in pork chops (about 8 oz / 225 g each) out of the fridge and set them on the counter. They need 20 to 25 minutes at room temperature before they hit the pan. Pat them completely dry with paper towels while you're at it. Dry surface means a better sear.
  2. Lightly crush 1 tsp caraway seeds for the marinade using the flat side of a knife or a mortar and pestle. You want them cracked open but not powdered. Set aside. Then mince 2 cloves garlic finely.
  3. In a small bowl, combine 4 tbsp whole-grain mustard, 1 tbsp Dijon mustard, 3 tbsp dark beer, 2 tsp smoked paprika, the 1 tsp crushed caraway seeds, 1/2 tsp ground cumin, 1 tbsp honey, the minced 2 cloves garlic, and the zest and juice of 1 large lemon (about 3 tbsp juice, 1 tsp zest). Stir into a thick, textured paste. It should smell sharp, earthy, and a little sweet. Set aside roughly 3 tbsp of this mixture in a separate small bowl for the pan sauce later.
  4. Rub 1 tsp fine sea salt evenly over both sides of all 5 chops. Then spread the remaining mustard-caraway paste all over them, coating both sides generously. Set aside while you prep the cauliflower.
  5. Preheat your oven to 425°F (220°C) now. That gives it the 15 to 20 minutes it needs to come to full temperature while you prep the cauliflower.
  6. Cut 1 large head of cauliflower into medium florets, all roughly the same size so they roast evenly. Aim for pieces about 1.5 inches (4 cm) across. Drop them into a large mixing bowl.
  7. Mince the remaining 4 cloves garlic finely. Lightly crush 1/2 tsp caraway seeds for the cauliflower. Add both to the bowl along with 2 tbsp olive oil, 1 tsp ground coriander, the 1/2 tsp crushed caraway seeds, 1/4 tsp cayenne, and 1 tsp fine sea salt. Toss everything together until every floret is coated. Spread onto a large parchment-lined baking sheet in a single layer. Don't crowd them or they'll steam rather than caramelize. Use two sheets if needed.
  8. Roast the cauliflower at 425°F (220°C) for 25 to 30 minutes. You're looking for cut edges that are a deep amber and tips beginning to char slightly. Rotate the pan halfway through.
  9. While the cauliflower roasts, roughly chop 1/2 cup loosely packed fresh flat-leaf parsley and set aside. If using a whole pomegranate, halve it and extract 1/2 cup pomegranate seeds (about 85 g). Hold each half cut-side down over a bowl and whack the back firmly with a wooden spoon.
  10. When the cauliflower has about 10 minutes left, heat your cast-iron skillet over medium-high for 2 to 3 minutes until genuinely hot. A drop of water should skitter and vanish immediately. Add 2 tbsp olive oil and swirl to coat.
  11. Lay the marinated pork chops in the hot pan. Don't move them. Sear for 3 to 4 minutes on the first side until the bottom is deeply browned and releases cleanly from the pan. Flip and sear the other side for another 2 to 3 minutes. The mustard paste will get very dark in spots. That's exactly what you want. If your pan isn't big enough for all 5, cook in two batches and keep the first batch loosely covered with foil.
  12. Check the internal temperature with a meat thermometer. You want 140°F (60°C) at the thickest part, away from the bone. Pull the chops onto a plate and let them rest for 5 minutes. Carry-over heat will bring them to a safe 145°F (63°C) and the juices will redistribute.
  13. While the chops rest, make a quick pan sauce. Keep the cast iron on medium heat. Add 1 tbsp margarine and let it melt, then pour in 1/4 cup (60 ml) chicken stock. Scrape up all the browned mustard and caraway bits with a spatula. Stir in the reserved mustard-caraway paste from earlier. Let it bubble for about 1 minute until slightly reduced, then take it off the heat.
  14. To plate, arrange the roasted cauliflower on a large platter or across individual plates. Lay the pork chops over or alongside. Spoon the pan sauce over everything. Scatter 1/2 cup pomegranate seeds and the chopped flat-leaf parsley generously across the top. A few extra lemon wedges on the side are a good call.
