- 3 cups Plain Greek yogurt, full-fat or 2%
- 3 tablespoons Honey (plus more for drizzling)
- 1 teaspoon Vanilla extract
- 1 cup Fresh strawberries, hulled and sliced
- ½ cup Fresh blueberries
- ½ cup Fresh raspberries
Instructions
- Line a rimmed baking sheet with parchment paper, letting the paper hang over the edges a bit for easy removal later.
- In a medium bowl, stir together 3 cups Greek yogurt, 3 tablespoons honey, and 1 teaspoon vanilla extract until smooth and evenly combined.
- Hull and slice 1 cup strawberries into thin rounds or halves.
- Pour the yogurt mixture onto the prepared baking sheet. Use a spatula or offset spatula to spread it into an even layer about ¼ inch thick, reaching almost to the edges.
- Scatter 1 cup strawberries, sliced, ½ cup blueberries, and ½ cup raspberries evenly over the yogurt, pressing them in gently so they stick.
- Drizzle an extra 1 to 2 tablespoons honey over the top in thin ribbons.
- Transfer the baking sheet to the freezer and freeze until completely solid, at least 3 hours or up to overnight.
- Once frozen solid, lift the bark off the sheet using the parchment overhang. Break or cut it into irregular shards and serve immediately. Store any leftovers in an airtight container or freezer bag in the freezer for up to 2 weeks.
