Crispy Beggars Chicken

A legendary Chinese dish with a theatrical twist. A whole chicken, marinated in aromatics and wrapped in lotus leaves, gets sealed inside a salt dough crust and baked until the meat turns impossibly tender. When you crack the shell at the table, the fragrance floods out. The skin crisps beautifully against the clay-like crust, and the meat stays juicy from its own steam. This takes time, but most of it is hands-off, and the payoff is a centerpiece dish that tastes like history.

Ingredients

  • 1 (3½–4 lb) whole chicken, giblets removed, patted dry
  • 3 tbsp Shaoxing wine
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 2-inch piece fresh ginger, peeled and sliced thin
  • 6 cloves garlic, smashed
  • 4 scallions, cut into 2-inch lengths
  • 2 whole star anise
  • 1 tsp Sichuan peppercorns
  • 1 tsp five-spice powder
  • ½ tsp ground white pepper
  • 1 tsp kosher salt
  • 2 large dried lotus leaves
  • 4 cups all-purpose flour
  • 2 cups kosher salt
  • 1 cup water
  • 1 large egg, beaten

Instructions

  1. Peel and slice 2-inch piece fresh ginger thin.
  2. Smash 6 cloves garlic with the flat of your knife.
  3. Cut 4 scallions into 2-inch lengths.
  4. In a small bowl, whisk together 3 tbsp Shaoxing wine, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp sesame oil, 1 tbsp honey, 1 tsp five-spice powder, ½ tsp ground white pepper, and 1 tsp kosher salt to make the marinade.
  5. Rub the marinade all over 1 (3½–4 lb) whole chicken, inside and out. Get into every crevice.
  6. Stuff the cavity with the sliced ginger, smashed garlic, scallion pieces, 2 whole star anise, and 1 tsp Sichuan peppercorns (if using).
  7. Cover the chicken and refrigerate for at least 2 hours, or overnight if you have time. The longer it sits, the deeper the flavor.
  8. When ready to cook, soak 2 large dried lotus leaves in warm water for 20 minutes to soften. If you don't have lotus leaves, cut large sheets of parchment paper instead.
  9. While the lotus leaves soak, make the salt dough: in a large mixing bowl, combine 4 cups all-purpose flour and 2 cups kosher salt. Add 1 cup water and stir until a shaggy dough forms. Knead in the bowl until smooth and pliable, about 3 minutes. Add a tablespoon more water if it feels too crumbly.
  10. Preheat the oven to 375°F (190°C).
  11. Drain the lotus leaves and pat them dry. Overlap them on a work surface to make a large square.
  12. Place the marinated chicken in the center of the lotus leaves (or parchment). Fold the leaves snugly around the chicken, tucking the edges underneath to form a neat parcel. Tie with kitchen twine if needed to hold it closed.
  13. On a sheet of parchment paper, roll out the salt dough into a large oval or rectangle, about ¼ inch thick. It should be big enough to fully encase the wrapped chicken.
  14. Place the lotus-wrapped chicken in the center of the dough. Bring the edges up and over, pinching and sealing all seams so the chicken is completely enclosed. Patch any cracks with extra bits of dough.
  15. Beat 1 large egg in a small bowl and brush it all over the dough to give it a glossy finish.
  16. Transfer the dough-encased chicken to a parchment-lined baking sheet and place it in the oven. Bake for 2 hours. The crust will turn golden and rock-hard.
  17. Remove from the oven and let rest for 10 minutes. The crust will be extremely hot.
  18. Crack the salt crust open with a sharp knife or the back of a heavy spoon. Peel away the crust and unwrap the lotus leaves. The chicken should be tender, fragrant, and glistening.
  19. Carve and serve immediately. The meat will be falling-off-the-bone tender with a subtle aromatic sweetness.
