Ingredients

  • 4 large (about 200g / 7 oz each) boneless skinless chicken breasts (chicken thigh-free as requested)
  • 6 tablespoons coconut aminos (this is your soy sauce hero)
  • 3 tablespoons honey
  • 2-inch knob fresh ginger, peeled and finely grated
  • 4 cloves garlic, minced
  • 1 tablespoon rice wine vinegar (or apple cider vinegar works too)
  • 2 tablespoons, divided cornstarch (1 tbsp for the chicken coating, 1 tbsp for the glaze)
  • 1 tablespoon margarine (as per your kitchen preference)
  • ½ teaspoon chili flakes (or more if you like the heat)
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper, freshly cracked
  • ½ teaspoon garlic powder
  • 2 cups (uncooked) jasmine rice, rinsed until water runs clear
  • 2½ cups water (for the rice cooker)
  • 4 stalks scallions, thinly sliced on the bias (green parts for garnish, white parts go in the glaze)
  • 1 small fresh red chili, thinly sliced into rings (optional garnish — skip if serving to heat-averse folks)
  • 1 tablespoon neutral cooking oil (avocado or sunflower oil — for coating the chicken before air frying)

Instructions

  1. Rinse 2 cups of jasmine rice under cold water, swishing it around until the water runs mostly clear — this gets rid of excess starch so you get fluffy, not gluey, rice. Add the rinsed rice and 2½ cups of water to your rice cooker, close the lid, and press start. It'll do its thing while you handle everything else.
  2. While the rice cooker works its magic, prep your chicken. Place one chicken breast on a chopping board, lay your hand flat on top, and use a sharp knife to slice it horizontally through the middle into two thinner cutlets. Repeat with all 4 chicken breasts so you end up with 8 thinner pieces — this ensures the air fryer cooks them through evenly without drying them out.
  3. In a large bowl, combine 1 tablespoon cornstarch, ½ teaspoon fine sea salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder. Add the chicken cutlets and 1 tablespoon of neutral oil, then toss well so every piece is lightly but evenly coated in the spiced cornstarch.   4. Preheat your air fryer to 200°C (390°F) for 3 minutes. Then arrange the coated chicken cutlets in a single layer in the air fryer basket — you may need to do this in two batches depending on your basket size. Air fry for 12 minutes, flipping halfway through at the 6-minute mark, until the chicken is golden and cooked through (internal temp should hit 74°C / 165°F).
  5. While the chicken air fries, make the glaze. Peel and finely grate the 2-inch knob of fresh ginger and mince the 4 garlic cloves. Thinly slice all 4 scallion stalks on the bias, keeping the white/light green parts separate from the dark green tops — the white parts go into the glaze, the green tops are for garnish. Thinly slice the 1 small red chili into rings and set aside for garnish.
  6. In a small bowl, whisk together 1 tablespoon cornstarch with 2 tablespoons of cold water until smooth — this is your glaze thickener. Set aside.
  7. Melt 1 tablespoon of margarine in a small saucepan over medium heat. Add the grated ginger, minced garlic, and the white parts of the scallions. Sauté, stirring constantly, for about 90 seconds until fragrant and softened.
  8. Pour in 6 tablespoons of coconut aminos, 3 tablespoons of honey, 1 tablespoon of rice wine vinegar, and ½ teaspoon of chili flakes. Stir well and bring to a gentle simmer over medium heat.

  10. If you're air frying in batches, cook your second batch now at 200°C (390°F) for 12 minutes, flipping at 6 minutes. While the second batch cooks, check that your rice cooker has finished — the rice should be perfectly fluffy. Give the rice a gentle fluff with a fork or rice paddle, then keep the lid on to stay warm.
  11. Toss all the cooked chicken cutlets into the glaze pan (or a large bowl if your saucepan is small) and stir and fold to coat every piece in that gorgeous sticky glaze. If needed, pop the pan over very low heat for 30 seconds just to get everything glossy and hot together.
