- 1.Preheat the oven to 350°F. Grease a baking dish with butter.
- 2.Season the eel fillets with salt and black pepper. In a large skillet, heat 2 tbsp of butter over medium-high heat. Add the eel and cook until browned on both sides, about 3 minutes per side. Transfer the eel to the prepared baking dish.
- 3.In the same skillet, melt the remaining 2 tbsp of butter. Whisk in the flour and cook until golden brown, about 2 minutes. Slowly whisk in the milk, stirring constantly, until the sauce is smooth and thickened. Season with salt and black pepper to taste.
- 4.Pour the sauce over the eel in the baking dish. Bake for 20-25 minutes, until the sauce is bubbly and the eel is cooked through. Serve hot over a bed of mashed potatoes.
