Ingredients

  • 8 (6-inch) tortillas corn tortillas, gluten-free, check label to confirm no wheat or gluten
  • 2 cups shredded cheddar cheese, or Mexican blend cheese
  • 2 tbsp vegetable oil (for cooking)
  • 1 cup salsa (for serving)
  • 1 cup guacamole, optional (for serving)

Instructions

  1. Heat a large non-stick skillet or cast-iron pan over medium heat. Add a small drizzle of vegetable oil (about ½ tsp) and spread it around with a paper towel.
  2. Place one corn tortilla (6-inch) flat in the pan. Sprinkle ¼ cup shredded cheddar cheese evenly over the entire surface of the tortilla, spreading it right to the edges.
  3. Top with another corn tortilla (6-inch), pressing down gently so the two tortillas stick together as the cheese starts to melt.
  4. Cook for 2 to 3 minutes, until the bottom tortilla turns golden and crisp with a few brown spots. You'll smell a toasty corn aroma.
  5. Flip the quesadilla carefully with a spatula. Cook the second side for another 2 minutes, until golden and the cheese is fully melted and gooey.
  6. Slide the quesadilla onto a cutting board. Repeat steps 2 through 5 with the remaining 6 corn tortillas (6-inch) and 1¾ cups shredded cheddar cheese, adding a tiny drizzle of vegetable oil to the pan between quesadillas if needed.
  7. Let the quesadillas cool for 1 minute so the cheese sets slightly and doesn't ooze out when you cut them.
  8. Use a sharp knife to cut each quesadilla into 4 triangles (cut in half, then cut each half in half again).
  9. Serve warm or at room temperature with salsa (1 cup) and guacamole (1 cup, optional) in small containers for dipping.
