Ingredients
- 8 cups vegetable broth or miso broth (use store-bought or homemade; if using miso, whisk in 3 tbsp white or red miso paste)
- 1 lb fresh or dried ramen noodles
- 4 large eggs (for soft-boiled)
- 8 oz shiitake or cremini mushrooms, sliced
- 1 tbsp vegetable oil (for sautéing mushrooms)
- 2 tsp tamari or coconut aminos (for mushrooms)
- 1 cup corn kernels (fresh, frozen, or canned and drained)
- 4 scallions, thinly sliced
- 4 nori sheets, halved or quartered
- 2 tbsp sesame seeds (toasted if possible)
- to taste chili oil (store-bought or homemade)
- optional, for meat eaters cooked chicken, pork belly, or shrimp, sliced or warmed (keep separate from vegetarian setup)
Instructions
- Fill a medium pot with water and bring to a boil over high heat.
- Once boiling, gently lower 4 large eggs into the water using a slotted spoon. Set a timer and boil for exactly 6 minutes and 30 seconds.
- While the eggs boil, fill a mixing bowl with ice and cold water.
- When the timer goes off, transfer the eggs to the ice bath immediately. Let them sit for at least 5 minutes, then peel and halve them. Set aside.
- Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add 8 oz sliced shiitake or cremini mushrooms and sauté, stirring occasionally, until they've given up their moisture and the edges are turning golden, about 5 to 6 minutes.
- Add 2 tsp tamari or coconut aminos to the mushrooms, toss to coat, and cook for another 30 seconds. Transfer to a serving bowl.
- Bring a large pot of water to a boil over high heat for the noodles.
- While the water heats, pour 8 cups vegetable broth or miso broth into a large pot over medium heat. If using miso, whisk in 3 tbsp white or red miso paste until fully dissolved. Bring to a gentle simmer and keep warm.
- Cook 1 lb fresh or dried ramen noodles in the boiling water according to package directions, usually 3 to 4 minutes for fresh, 4 to 5 minutes for dried. Drain and rinse briefly under cool water to stop cooking. Transfer to a serving bowl.
- Thinly slice 4 scallions. Halve or quarter 4 nori sheets. Arrange these, along with 1 cup corn kernels, 2 tbsp sesame seeds, the halved soft-boiled eggs, the sautéed mushrooms, and chili oil to taste in small serving bowls or on a platter.
- If serving meat eaters, prepare their optional cooked chicken, pork belly, or shrimp separately, keeping it on a distinct platter or in a separate bowl with separate utensils.
- Set everything out on the table: the pot of warm broth with a ladle, the bowl of noodles, and all the toppings. Let everyone build their own bowl by adding noodles, ladling broth over, and choosing their toppings.
